Whispers of Haute-Savoie
An ode to the forests of Haute-Savoie, where autumn begins beneath the pines and every basket tells a story. Four wild-inspired mushrooms, kissed with tarragon butter, resting upon crispy puff pastry above a woodland cream, served with a delicate balsamic emulsion. A taste of the French Alps, carried from childhood to the plate.

Kabayaki is a traditional Japanese cooking style usually used for eel. We score the Portobello like a steak and glaze it with a sweet and savory soy sauce. It has a rich, melt-in-your-mouth texture that mimics seafood or meat perfectly.
Portobello Stem "Tsukudani" Roll with Mushroom Umami Glaze
This sushi roll showcases a sustainable approach by using the meaty stems of the Portobello mushroom. They are simmered in a sweet ginger-soy glaze (Tsukudani) to create a chewy, savory filling.
